Cevichochos – A Recipe
Cevichochos ready to enjoy!
Cevichochos is an Ecuadorian high-altitude meal.
It was invented approximately 45 years ago when it first started to be sold from city food carts in Quito. This is a delicious, fresh and healthy meal that can be served with meat, as vegetarian or even vegan!
Ever since it’s invention, Cevichochos has become extremely popular throughout Ecuador. The origin of the Cevichochos recipe is ceviche. Ceviche is a traditional dish made from raw fish or seafood that is marinated in lime juice and mixed with diced tomatoes, onions and cilantro.
This Cevichochos recipe uses South American white beans called Chochos (lupini beans) as the main ingredient. Chochos are now considered a ‘super-food’ due to their high protein content and nutritional value.
If there is not a South American or Latin American grocery store near you, Italian shops will stock a type of lupini beans.
These beans are very similar to Edamame (popular Japanese beans) in appearance and texture, although, they are white. The beans have a very bitter flavor if they aren’t boiled and soaked (they need to be soaked for several days to remove the bitterness). For this reason, when making this recipe, you should buy the beans precooked and soaked. Rinse the beans before adding them together with lime juice, vegetables, and seasonings.
These beans are delicious in this recipe, and they put a healthy and traditional twist on a regional dish.
Recipe – serves 4
Mixing the ingredients much like ceviche
Ingredients
– 1 cup of Chocos (lupini beans)
– 1/2 cup fresh lime juice
– 4 tablespoons of tomato sauce (not ketchup)
– 2 tomatoes
– 1 onion
– Finely chopped cilantro
– Popcorn to taste
– Toasted corn to taste
– Plantain chips
– Tuna, chicken or other meat (optional)
– Salt to taste
Preparation
Cevichochos, plantain chips, popcorn and toasted corn (a fibre-friendly meal 🙂 )
1. Dice the onions and tomatoes.
2. Mix the onions, salt, tomatoes, tomato sauce, chochos, and lime juice into a bowl and mix well.
3. Evenly divide plantain chips onto a large plate.
4. Place one cup of the mixture onto each plate and top with cilantro, popcorn, toasted corn, and optional meat and\or marinated fish.
5. Sit down with a knife, fork and spoon and enjoy!
